Cabbage Soup Recipe
 
Ingredients
2 table spoons of canola oil
3 large carrots
3 stalks of celery
1 medium parsnip
1 medium onion
2 cloves of garlic
1/2 of a large head of green cabbage
1 can of stewed tomatoes
1quart low sodium chicken broth
1 can of beans, I used white beans
Salt and pepper to taste
 
Heat up canola oil in a pot, chop onion, carrots, celery, garlic and cabbage. When oil is heated add your chopped veggies and sauté, sauté for about 3 minutes and ads stewed tomatoes, sauté another 2 minutes stirring occasionally. Once the above ingredients are sautéed add chicken broth and lower heat to low and cover. This will cook down in about 45-60 minutes stir occasionally and add a bit of water IF necessary. Once cabbage is wilted and soft add your can of beans making sure to drain and rinse the first.
 
This is a healthy low calorie very filling soup. You can also add chicken if you'd like for some added protein
